After distillation the spirit is first rested in handcrafted clay jars for three months, then transferred to a combination of oak, maple and smoked hickory casks for approximately twelve months of maturation. This multi-wood approach creates a layered, complex character that rewards both the neat drinker and the cocktail enthusiast.
